The name of the restaurant is Bombay Bhel because Mumbai used to be called Bombay and it was called Bhel because Bhel is a very popular type of food in Mumbai, which is also what the restaurant is known for.
The process of cooking this biryani is very long, the masala used to make this biryani is made completely from scratch at the restaurant. They even crush the spices themselves to add to the rice. They would not use nor recommend the Shaan packets since they aren’t authentic, nor are they flavourful or strong enough.
